Cut the 250 grams of paneer into small, bite-sized cubes. Place the paneer cubes in a bowl.

Add 1 tablespoon of oil, salt to taste, 1 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1/2 teaspoon of smoked paprika, 1 1/2 teaspoons of light soy sauce, and 1/4 teaspoon of vinegar to the paneer. Mix all the ingredients thoroughly until the paneer cubes are evenly coated with the marinade.

In a separate bowl, combine 3 tablespoons of cornflour, 2 tablespoons of rice flour, 1 tablespoon of all-purpose flour, 1/2 teaspoon of baking powder, and a pinch of salt. Mix these dry ingredients well to form the crispy coating mixture.

Take each marinated paneer cube and coat it thoroughly with the dry mixture, ensuring full coverage.

Place the coated paneer bites in the air fryer basket in a single layer, ensuring they are not overcrowded. Spray the paneer bites lightly with oil to help them crisp up.

Air fry at 200 °C for 8 minutes. Halfway through the cooking time (at approximately 4 minutes), shake the air fryer basket to ensure even cooking and crispiness.

While the paneer is air frying, heat 1 tablespoon of oil in a pan over medium heat. Add the 5-6 finely chopped garlic cloves and 1 inch of finely chopped ginger to the hot oil. Sauté until the garlic and ginger are fragrant and lightly browned.

Add 1 1/2 tablespoons of gochujang, 1 tablespoon of light soy sauce, 1/2 tablespoon of honey, 1 teaspoon of vinegar, 1/2 teaspoon of sesame oil, and 2 tablespoons of water to the pan. Mix all the sauce ingredients well and cook until the sauce thickens slightly, stirring continuously.

Add the air-fried crispy paneer bites directly into the pan with the prepared Korean gochujang sauce. Toss the paneer bites gently, ensuring each piece is fully coated with the sticky sauce.

Transfer the Korean Paneer Bites to a serving dish. Garnish generously with chopped spring onion greens and a sprinkle of sesame seeds. Serve immediately with freshly sliced cucumber and cooked rice.
