Preheat the oven to 350°F (175°C).

In a large bowl, mash the 2 ripe bananas until smooth.

Add 1/3 cup Oikos Pro (Plain), 3 eggs, 1/4 cup maple syrup, 1 teaspoon vanilla extract, and 100 grams grated carrot to the mashed bananas.

Whisk the wet ingredients until thoroughly combined.

Sift in 1 cup almond flour, 1 cup oat flour, 1/4 cup vanilla protein powder, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon sea salt, 1 1/2 teaspoons cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground allspice, and 1/8 teaspoon nutmeg into the wet mixture.

Add 30 grams pecans to the mixture.

Mix the ingredients until JUST combined. Be careful not to overmix.

Scrunch up a piece of parchment paper and lay it into a square baking dish, ensuring it covers the bottom and sides.

Pour the cake mixture into the prepared dish and spread it out evenly.

Bake for 28 minutes, or until a toothpick inserted into the center comes out clean.

While the cake is baking or cooling, prepare the icing. In a separate bowl, combine 1/2 cup Oikos Pro (Plain), 50 grams cream cheese (25% less fat), 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, and 1/2 scoop vanilla protein powder.

Mix the icing ingredients until smooth and well combined.
Let the baked cake cool in the dish for 15 minutes.

Once cooled, spread the prepared icing evenly over the top of the cake.

Cut the cake into 12 squares and serve.
