Thoroughly pat dry the chicken wings using paper towels. Place the dried wings in a large mixing bowl.

To the wings, add paprika, garlic powder, onion powder, dried oregano, black pepper, salt, dark roast coffee grounds, and baking powder. Mix all ingredients very well until every crevice of the wings is covered with the seasoning.

Arrange the seasoned wings in an air fryer basket in a single layer (work in batches if necessary). Place them in the air fryer and cook for 20 minutes.

While the wings are cooking, prepare the BBQ sauce. In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, orange juice, the juice of one lime, and the juice of one sour orange. Add paprika, garlic powder, onion powder, dried oregano, and black pepper. Pour in the brewed Cuban coffee.

Whisk all the BBQ sauce ingredients together in the pan. Bring the sauce to a boil over medium heat, then reduce the heat to low and allow it to simmer and thicken for 10 minutes, stirring occasionally.

Once the wings are cooked, transfer them to a large mixing bowl. Pour the prepared Cuban Cafecito BBQ Sauce over the cooked wings. Toss the wings until they are thoroughly coated with the sauce.

For the dipping sauce, combine mayonnaise, peeled garlic cloves, the juice of one lime, the juice of one sour orange, and fresh cilantro in a small blender or food processor. Blend until the mixture is smooth and creamy.

Plate the Cuban Cafecito Wings. Pour the Garlic Mojo Crema into a small dipping bowl. Optionally, prepare a cafecito by brewing Cuban coffee and mixing it with sugar to create a foam (espumita), and serve alongside the wings.
