Add pitted Medjool dates, 1/2 cup unsweetened shredded coconut, cocoa powder, almond butter, vanilla extract, and salt to a food processor.

Process the mixture until it forms a sticky dough. If the mixture is too dry, add water one tablespoon at a time until it comes together.

Scoop out approximately 1 tablespoon of the mixture and roll it into a ball between your palms. Repeat with the remaining mixture.

Place the remaining 1/4 cup of unsweetened shredded coconut in a shallow dish. Roll each bliss ball in the coconut until evenly coated.

Arrange the bliss balls on a plate or in an airtight container. Refrigerate for at least 30 minutes to allow them to firm up.
