In a medium bowl, combine the deluxe chocolate protein powder, powdered peanut butter, oat flour, and pinch of salt. Whisk until well combined.

Add the maple syrup and vanilla extract to the dry ingredients. Gradually add the almond milk, 1 tablespoon at a time, mixing until a thick, dough-like consistency forms. You may not need all the milk, or you might need a tiny bit more, depending on your protein powder.

Using your hands, roll the mixture into 8 small, bite-sized spheres, approximately 2.5 cm in diameter. Place them on a plate lined with parchment paper.

Place the rolled protein bites in the freezer for 15 minutes to firm up.

While the bites are chilling, melt the dark chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth. Alternatively, use a double boiler.

Pour the rice crisp cereal into a shallow bowl.

Remove the protein bites from the freezer. Dip each bite into the melted chocolate, ensuring it's fully coated. Immediately transfer the chocolate-coated bite to the bowl of rice crisp cereal and roll it until completely covered.

Place the coated bites back on the parchment-lined plate. Refrigerate for at least 45 minutes, or until the chocolate coating is fully set.
