To prepare the Peri Peri Marinade, add the 1/2 red pepper, 1/2 onion, 2 cloves garlic, and 1 red chili to a blender or food processor.

Add 1/2 tablespoon paprika, 1/2 tablespoon dried oregano, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon balsamic vinegar, and the juice of 1/2 lemon to the blender.

Add 1 tablespoon olive oil to the blender. Blend all ingredients until a smooth marinade is formed.

To marinate the chicken, butterfly the 2 chicken breasts by cutting horizontally almost all the way through and opening them flat.

Pour the prepared peri peri marinade over the chicken breasts, ensuring they are fully coated. Reserve 1 tablespoon of the marinade for the peri peri mayo.

Cover the chicken and let it marinate in the fridge for at least 30 minutes. For best results, marinate overnight.

To cook the chicken, heat a frying pan or griddle pan over medium-high heat.

Once the pan is hot, place the marinated chicken breasts in the pan. Cook for 4-5 minutes on each side, or until cooked through and nicely charred.

To prepare the Peri Peri Mayo, in a small bowl, combine 2 tablespoons mayonnaise with the reserved 1 tablespoon of peri peri marinade. Mix well.

To assemble the burger, toast the brioche buns.

Place a slice of cheese on the bottom bun. Add a cooked peri peri chicken breast on top of the cheese.

Add lettuce and tomato slices. Spread a generous amount of the peri peri mayo on the top bun. Place the top bun on the burger to complete the assembly.
