In a large mixing bowl, mash the ripe bananas thoroughly with a fork until mostly smooth.

Add the peanut butter, maple syrup, vanilla protein powder, and unsweetened almond milk to the mashed bananas. Whisk everything together until the mixture is well combined and smooth.

In a separate medium bowl, combine the rolled oats, baking powder, and salt. Stir well to distribute the dry ingredients evenly.

Pour the dry oat mixture into the wet banana mixture. Stir with a spatula until just combined. Be careful not to overmix. If using, gently fold in any optional add-ins like mini chocolate chips or chopped walnuts.

Spoon the bar mixture into the prepared 8x8 inch baking dish. Use the back of a spatula or your hands to spread the mixture evenly and press it down firmly into the pan to create a compact layer.

Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean.

Remove the baking dish from the oven and let the bars cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the entire slab out of the pan. Cut into 8 equal bars (2 bars per serving).
