Bring a large pot of salted water to a rolling boil. Add the Trader Joe's Organic Black Pepper Barilotti Pasta and cook according to package directions until al dente, about 8-10 minutes.

While the pasta cooks, prepare the lemon ricotta sauce. In a large bowl, combine the ricotta cheese, lemon zest, lemon juice, grated Parmesan cheese, olive oil, minced garlic, and red pepper flakes. Stir until well combined and smooth.

Once the pasta is cooked, reserve 1 cup of the pasta cooking water. Drain the pasta.

Add the drained pasta and fresh spinach to the bowl with the lemon ricotta sauce. Toss gently to combine, allowing the heat from the pasta to wilt the spinach. If the sauce is too thick, add a little of the reserved pasta water, 1-2 tablespoons at a time, until it reaches your desired consistency.

Season with freshly ground black pepper to taste. Serve immediately, garnished with extra Parmesan cheese if desired.
