In a large mixing bowl, combine the crumbled paneer, finely chopped red onion, green bell pepper, tomato, green chilies, and fresh cilantro. Mix well to ensure all ingredients are evenly distributed.

Add the mayonnaise, ketchup, red chili powder, garam masala, salt, and black pepper to the paneer mixture. Stir everything together until the paneer is well coated and the filling is creamy and cohesive. Taste and adjust seasoning as needed.

Lay out the sandwich bread slices. Spread a generous amount of the peppy paneer filling onto four of the bread slices. If using, place a cheese slice on top of the paneer filling on each of these four slices.

Top with the remaining four slices of bread to form sandwiches. Lightly butter one side of each sandwich.

Heat a non-stick pan or a sandwich griller over medium heat. Place the buttered side of the sandwiches down onto the pan or griller. Butter the top side of the sandwiches.

Grill the sandwiches for 3-5 minutes per side, or until golden brown and crispy on the outside, and the filling is heated through and the cheese (if used) is melted. If using a sandwich griller, follow its instructions for grilling time.

Remove the grilled sandwiches from the pan or griller. Cut them diagonally in half and serve immediately with ketchup or a spicy chutney.
