In a large skillet or wok, cook the sliced bacon over medium-high heat until it is crispy. This should take about 5-7 minutes.

Once crispy, remove the bacon from the pan with a slotted spoon and set it aside on a paper towel-lined plate to drain. Leave about 2 tablespoons of rendered bacon fat in the pan; discard any excess.

Add the minced garlic to the bacon fat in the pan and sauté for 30 seconds to 1 minute, until fragrant. Be careful not to burn the garlic.

Add the day-old cooked rice to the pan. Use a spatula or wooden spoon to break up any clumps and mix the rice thoroughly with the garlic and bacon fat. Cook for 3-5 minutes, stirring occasionally, allowing the rice to heat through and slightly crisp.

Push the rice mixture to one side of the pan to create an empty space. Crack the 2 eggs directly into this empty space and scramble them until cooked through, about 1-2 minutes.

Mix the scrambled eggs into the rice mixture until well combined.

Add the soy sauce, oyster sauce, and white pepper to the fried rice. Stir vigorously to ensure the seasonings are evenly distributed throughout the rice. Cook for another 1-2 minutes.

Incorporate the chopped green onions (reserving some for garnish if desired) and the reserved crispy bacon into the fried rice. Mix well.

Drizzle the sesame oil over the fried rice and give it one final mix.

Transfer the Garlic Bacon Fried Rice to serving bowls. Garnish with additional chopped green onions and crumbled crispy bacon, if desired, before serving hot.
