Combine blueberries, granulated sugar, and water in a small saucepan over medium heat. Bring to a simmer, stirring occasionally, until the sugar dissolves and the blueberries begin to burst, about 5-7 minutes.

Strain the blueberry mixture through a fine-mesh sieve into a clean bowl, pressing on the solids with the back of a spoon to extract all the liquid. Discard the solids. Let the blueberry syrup cool completely, then refrigerate for at least 30 minutes to chill.

In a small bowl, whisk together the half-and-half (or heavy cream) and vanilla extract.

To assemble each cream soda, fill a tall glass with ice. Add 2-3 tablespoons of the chilled blueberry syrup to each glass.

Pour 1-2 tablespoons of the vanilla cream mixture over the syrup in each glass.

Top with chilled sparkling water. Stir gently to combine the layers, creating a beautiful swirl.
