Preheat your oven to 350°F. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the bars out later.

In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

In a large bowl, using an electric mixer, cream together the softened unsalted butter, granulated sugar, and packed light brown sugar until light and fluffy, about 2-3 minutes.

Beat in the large egg and vanilla extract until well combined, scraping down the sides of the bowl as needed.

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Fold in the chocolate chunks until evenly distributed throughout the dough.

Press the cookie dough evenly into the prepared 8x8 inch baking pan.

Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs, but not wet batter.

Remove the pan from the oven and let the cookie bars cool completely in the pan on a wire rack for at least 30 minutes before lifting them out using the parchment paper overhang. This prevents them from crumbling.

Once cooled, cut the cookie bars into squares and serve.
