In a medium bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined and slightly frothy. Set aside.

Heat 1 tablespoon of unsalted butter in a large non-stick skillet over medium-high heat. Add the chopped prawns and cook for 2-3 minutes, or until they turn pink and are almost cooked through. Add the minced garlic and the white parts of the scallions, and cook for another minute until fragrant.

Remove the prawn mixture from the skillet and set aside in a small bowl. Wipe the skillet clean with a paper towel if necessary.

Return the skillet to medium heat and add the remaining 1 tablespoon of unsalted butter. Once the butter is melted and shimmering, pour in half of the egg mixture. Let it cook undisturbed for about 30 seconds until the edges begin to set.

Gently push the cooked edges towards the center of the skillet with a spatula, tilting the pan to allow the uncooked egg to flow underneath. Continue this process until most of the egg is set but still slightly moist on top.

Spoon half of the cooked prawn mixture over one half of the omelette. Sprinkle with half of the chopped fresh parsley and half of the green parts of the scallions. Carefully fold the other half of the omelette over the filling.

Cook for another 30 seconds to 1 minute, or until the omelette is heated through and the filling is warm. Slide the omelette onto a plate.
Repeat steps 4-7 with the remaining egg mixture, prawn filling, parsley, and scallions to make a second omelette. If serving 4, you can cut each omelette in half.

Serve immediately, optionally garnished with extra fresh parsley and grated Parmesan cheese.
