To prepare the chimichurri, combine the packed fresh parsley, packed fresh cilantro, fresh oregano leaves, roughly chopped red onion, peeled garlic cloves, red wine vinegar, olive oil, salt, black pepper, and red pepper flakes in a food processor or blender.
