Cook the pasta according to package instructions. Once cooked, drain the pasta and set it aside.

In a large pot or Dutch oven, melt 1 tablespoon of butter over medium heat. Add 1 tablespoon of minced garlic and sauté until fragrant, about 30 seconds to 1 minute.

Add the peeled and deveined shrimp to the pot. Season with salt, pepper, and the 3 tablespoons of Cajun seasoning. Cook the shrimp for 2-3 minutes per side, or until they turn pink and are cooked through. Remove the cooked shrimp from the pot and set aside.

Using the same pot, add the remaining 1 tablespoon of butter and 1 tablespoon of minced garlic. Stir in the 1/2 cup of heavy cream and the diced tomato. Simmer the sauce for 2-3 minutes, stirring occasionally, until it has slightly thickened.

Return the cooked pasta and cooked shrimp to the pot with the sauce. Top with Parmesan cheese and fresh parsley, to taste. Mix everything together until the pasta and shrimp are well coated with the sauce and warmed through.

Serve immediately, optionally paired with your favorite steamed or roasted vegetable. Enjoy!
