Chop the bread into bite-sized pieces. Place the chopped bread in the air fryer with a drizzle of olive oil and a sprinkle of salt. Air-fry at 180°C for 10 minutes, mixing halfway through, to create croutons.

In a large bowl, combine all ingredients for the dressing: 1/2 cup mayo, 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon dijon mustard, 1 tablespoon minced garlic, salt, pepper, and 1/4 cup Parmesan cheese. Whisk until well combined.

Add the chopped 1 head of cos lettuce, 1/3 cup Parmesan cheese, and the prepared croutons (from step 2) to the bowl with the dressing.
