In a bowl, season the pork ribs with the soy sauce and salt. Mix well to evenly coat the ribs and let marinate for 10 minutes.

Heat a drizzle of oil in a large pan over medium-high heat. Sear the pork ribs on all sides until nicely browned, then transfer them to a plate and set aside. In the same pan, add the rock sugar and cook until it melts and turns a light amber color.

Pour in the black vinegar, Shaoxing wine, soy sauce, dark soy sauce, and water. Return the pork ribs to the pan and add enough water to just cover them. Add the ginger slices and garlic cloves, then bring everything to a boil.

Once boiling, cover the pan with a lid, reduce the heat to low, and let the ribs simmer for 25 minutes, or until tender.

Remove the lid and increase the heat to high. Continue cooking until the liquid reduces into a thick, glossy sauce that coats the ribs evenly. Gently toss the ribs occasionally to ensure they are well glazed.

Transfer the ribs to a serving plate and spoon any remaining sauce over the top. Serve immediately with a bowl of steamed rice.
