Bring a large pot of generously salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Reserve 1 cup of pasta water before draining the pasta.

While the pasta is cooking, heat a large, deep pan or Dutch oven over medium heat. Add the butter and allow it to melt.

Add the minced garlic and chopped onion to the pan. Sauté for 5-7 minutes, stirring occasionally, until the onion is softened and translucent and the garlic is fragrant.

Stir in the tomato puree, salt, red chili flakes, black pepper, and granulated sugar. Mix all ingredients thoroughly to combine.

Pour in 1/2 cup of water (or some of the reserved pasta water) and bring the sauce to a gentle simmer. Let it cook for 2-3 minutes, stirring occasionally, allowing the flavors to meld.

Add the drained, cooked pasta to the sauce in the pan. Toss everything together until the pasta is evenly coated with the tomato sauce.

Pour in the heavy cream and mix again until it is fully incorporated into the sauce, creating a creamy consistency.

Stir in the grated Parmesan cheese. Continue mixing until the cheese has melted completely and the sauce is smooth and creamy. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.

Remove from heat. Garnish the finished pasta with freshly chopped cilantro.

Serve the creamy tomato pasta hot, with extra grated Parmesan cheese on the side if desired.
