Peel the garlic cloves. In a pan, sauté the peeled garlic cloves with 3 tablespoons of olive oil over medium heat. Stir continuously to prevent burning, as garlic cooks very quickly. Cook until fragrant and lightly golden, about 3-5 minutes.

Remove the pan from the heat and allow the sautéed garlic to cool completely. This will take approximately 5 minutes.

Once cooled, mash the sautéed garlic cloves into a paste. In a medium bowl, combine the mashed garlic with the 2 tablespoons of softened butter, salt, black pepper, a pinch of red pepper flakes (if desired), and the finely chopped parsley. Mix well until all ingredients are thoroughly combined.

Preheat your oven to 230°C (446°F). Slice the large loaf of bread or ciabatta in half lengthwise and place the halves, cut-side up, on a baking tray.

Generously spread the prepared garlic mixture evenly over the cut surfaces of both bread halves.

Sprinkle a generous amount of grated cheese (such as mozzarella) over the garlic mixture on both bread halves.

If you enjoy extra spice, sprinkle additional red pepper flakes over the cheese.

Bake the garlic cheese bread in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly and the edges of the bread are crispy and golden brown.

Remove from the oven, slice into desired portions, and serve hot. Enjoy!
