In a bowl, combine 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 teaspoon sugar, 1 minced clove of garlic, 1/2 teaspoon cornflour, and 50ml water. Whisk all the ingredients together until well combined.

Heat 1 tablespoon of oil in a pan over medium-high heat. Add 12 dumplings to the hot pan. Cook for 2-3 minutes until the bottoms of the dumplings are golden brown and crispy.

Pour 50ml of water into the pan with the dumplings. Immediately cover the pan with a lid and let the dumplings steam for 5-6 minutes until cooked through.

Remove the lid from the pan. Pour the prepared sauce evenly over the dumplings.

Toss the dumplings in the sauce until the sauce thickens and coats the dumplings, about 1-2 minutes.

Garnish the cooked dumplings with chopped spring onion and chili flakes before serving.
