Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add 1 pound of ground beef and 1/2 diced yellow onion to the skillet.

Cook, breaking up the beef with a spoon, until the meat is browned and the onion is softened. This should take about 5-7 minutes.

Drain any excess grease from the skillet.

Stir in 1 diced bell pepper, 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning), 1 cup beef broth, 1 (15 ounce) can diced tomatoes (undrained), 1 (15 ounce) can black beans (drained and rinsed), and 1/2 cup frozen corn.

Bring the mixture to a simmer.

Reduce the heat to medium-low, cover the skillet, and cook for 10-15 minutes, or until the bell pepper is tender and the sauce has thickened slightly.

Remove the skillet from the heat.

Stir in 1/2 cup salsa and 1/4 cup chopped fresh cilantro.

Sprinkle 1 cup of shredded cheese evenly over the top of the mixture.

Cover the skillet again and let it sit for 2-3 minutes until the cheese is melted.

Serve warm with your favorite optional toppings such as sour cream, avocado, extra cilantro, or tortilla chips.
