Bring a large pot of heavily salted water to a rolling boil. Add the pasta and cook according to package directions until al dente. Before draining, reserve 1/2 cup of the pasta water. Drain the pasta and set aside.

While the pasta is cooking, thinly slice the large onion. This step can be a bit tear-inducing, so prepare accordingly!

In a large skillet, heat the vegetable oil over medium-low heat. Add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, for 20-25 minutes, or until the onions are deeply caramelized and tender. Be patient, as this process takes time to develop rich flavor.

While the onions are caramelizing, prepare the dressing. In a medium bowl, combine the sour cream and mayonnaise.

To the sour cream and mayonnaise mixture, add the soy sauce, 2-3 tablespoons of the reserved pasta water (start with 2 and add more if needed for desired consistency), vinegar, lemon juice, honey, and black pepper. Whisk everything together until well combined and smooth.

Add the cooked pasta, caramelized onions, chopped green onions, and fresh parsley to the bowl with the dressing.

Toss everything together gently until the pasta and onions are evenly coated with the creamy dressing. Let the pasta salad sit for at least 1 minute to allow the flavors to meld before serving. This dish can be served warm or at room temperature.
