Preheat the oven to 200 C. Line a baking tray with baking paper.

In the lined baking tray, toss the cooled cooked jasmine rice with the soy sauce, chilli crisp oil, and sesame oil until the rice is evenly coated. Spread the coated rice out evenly and thinly on the baking tray.

Bake the rice for 30 to 40 minutes, tossing halfway through, until it is golden and crispy. Set aside to cool.

Cook the FroPro Southern or Sweet Chilli Chicken Tenders according to the package instructions. Once cooked, chop them into bite-sized pieces.

In a large bowl, combine the thinly sliced cucumbers, edamame, thinly sliced green onions, and chopped avocado. Add the chopped cooked chicken and the cooled crispy rice to the bowl.

In a separate small bowl, whisk together the Greek yoghurt, mayo, sweet chilli sauce, and paprika until smooth. Add water as needed to thin the dressing to your desired consistency. Taste and adjust seasonings if necessary.

Pour the prepared sweet chilli creamy dressing over the salad mixture in the large bowl. Toss gently with tongs to ensure all ingredients are coated with the dressing.

Garnish with sesame seeds or chopped peanuts, if desired. Serve immediately and enjoy.
