Optional: Sear the pork chops. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side until golden brown. This step adds flavor but can be skipped if short on time.

Layer the ingredients in the slow cooker. Place the 1 1/2 lbs of baby potatoes (halved or quartered) in the bottom of the slow cooker. Top the potatoes with the 1 thinly sliced medium onion and 3 minced cloves of garlic.

Season the pork chops with salt, pepper, 1 teaspoon of paprika, and 1 teaspoon of dried thyme (or 1 tablespoon fresh). Place the seasoned pork chops on top of the potatoes and onions in the slow cooker.

Make the creamy sauce. In a bowl, whisk together 1 cup of chicken broth, 1 cup of heavy cream, and 2 tablespoons of Dijon mustard. Pour the whisked sauce evenly over the pork chops and potatoes in the slow cooker.

Cook. Cover the slow cooker and cook on low for 4 hours or on high for 2 hours. The pork chops should reach an internal temperature of 165°F (74°C), and the potatoes should be tender.

Optional: Thicken the sauce. If the sauce is too thin, mix 2 tablespoons of all-purpose flour with a little water to form a slurry. Stir the slurry into the sauce in the slow cooker. Cook on high for an additional 10–15 minutes until thickened.

Serve. Spoon the creamy sauce over the pork chops and potatoes. Garnish with fresh parsley if desired.
