Preheat your oven to 450°F. Prepare a baking dish for the cherry tomatoes.

In the prepared baking dish, combine the cherry tomatoes, minced garlic, 2 tablespoons of olive oil, 1 tablespoon of honey, 1 teaspoon of salt, 1 teaspoon of pepper, a pinch of cumin, and fresh thyme sprigs. Toss gently to ensure the tomatoes are evenly coated.

Roast the cherry tomatoes in the preheated oven for approximately 20 minutes, or until the tomatoes are soft, slightly shriveled, and have burst open, releasing their flavorful juices.

While the tomatoes are roasting, prepare the whipped feta dip. Add the softened cream cheese, crumbled feta cheese, 1/4 cup of water, 2 tablespoons of honey, 1 teaspoon of pepper, 1/2 teaspoon of salt, and the lemon zest to a food processor.

Process the mixture on high until it is completely smooth and creamy. Scrape down the sides of the food processor bowl as needed to ensure all ingredients are well incorporated.

Transfer the smooth whipped feta dip into a serving bowl and spread it evenly across the bottom.

Carefully spoon the warm, roasted cherry tomatoes, along with all their accumulated juices and herbs from the baking dish, over the top of the whipped feta.

Optionally, garnish with an extra grind of black pepper or a few fresh thyme leaves. Serve immediately with toasted baguette slices or crostini.
