While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium heat. Add the chopped yellow onion and cook until softened, about 3-5 minutes.

Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant, being careful not to burn the garlic.

Stir in the curry powder, turmeric powder, and ground cumin. Cook for another minute, stirring constantly, to toast the spices.

Pour in the crushed tomatoes and coconut milk. Bring the sauce to a gentle simmer, then reduce heat to low and let it cook for 5-7 minutes, allowing the flavors to meld.
