Heat a non-stick pan over medium heat. Add 1/4 tablespoon of chili oil or chili crisp to the pan for the first serving.

Sprinkle 1/4 cup of shredded cheddar cheese evenly over the chili oil in the pan.

Crack 2 eggs directly into the pan on top of the cheese and chili oil.

Sprinkle 1 teaspoon of Everything but the Bagel seasoning over the eggs.

Sprinkle some sliced green onions over the eggs.

Allow the eggs to cook until the whites are set but the yolk is still runny, about 2-3 minutes.

Using a spatula, carefully fold one side of the cooked egg over the other, creating a half-moon shape.

Sprinkle an additional 1/8 tablespoon of chili oil or chili crisp (or just the flakes) over the folded egg.

Sprinkle more sliced green onions on top of the folded egg.

Transfer the cooked chili oil egg onto a piece of toast. Repeat steps 1-9 for the remaining 3 servings.

Serve immediately.
