Continue to cook the caramel until it reaches a rich amber color. This process typically takes approximately 8-10 minutes. Watch it carefully as it can burn quickly once it starts to color.

Once the caramel has reached the desired amber color, immediately and carefully pour the hot coconut mixture from Step 2 into the hot caramel. Stir quickly and vigorously to combine the coconut and caramel. Be very cautious as the mixture will be extremely hot and sticky.

Line a baking sheet with parchment paper. Working quickly, use a spoon to scoop small portions of the hot mixture onto the prepared baking sheet. Then, use two spoons to shape the mixture into small, rounded coquitos (coconut caramel candies).

Allow the coquitos to cool completely at room temperature on the parchment-lined baking sheet. This will take at least 30 minutes, or longer depending on ambient temperature.

Once cooled, the coquitos will be firm and chewy, ready to be enjoyed.
