In the 9x13 inch baking pan, whisk together the full-fat coconut milk, red curry paste, minced garlic, minced fresh ginger, soy sauce, oyster sauce, peanut butter, sesame oil, and rice vinegar until well combined and smooth.

Squeeze the juice from 1 lime directly into the mixture in the pan and whisk again to incorporate.

Add the chopped bok choy to the pan and stir it into the sauce mixture until evenly coated.

Arrange the 15-20 frozen dumplings in a single layer on top of the bok choy and sauce mixture in the pan.

Cover the baking pan tightly with aluminum foil. Bake for 25-30 minutes, or until the dumplings are cooked through and the sauce is bubbling.
