Preheat oven to 400°F. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.

Add the beef to the pot and sear on all sides until browned, about 5-7 minutes. Remove beef and set aside.

Add chopped onion, carrots, and sliced mushrooms to the pot. Cook until softened, about 5-7 minutes.

Stir in the flour and cook for 1 minute, stirring constantly.

Gradually whisk in the stout beer, beef broth, and Worcestershire sauce. Bring to a simmer, stirring until the sauce thickens.

Return the beef to the pot. Stir in fresh thyme, salt, and black pepper. Remove from heat.

Pour the beef and vegetable mixture into a 9-inch pie dish or individual ramekins.

Unroll the thawed Trader Joe's Puff Pastry and place it over the filling, trimming any excess. Crimp the edges to seal.

Brush the top of the puff pastry with the beaten egg. Cut a few small slits in the top to allow steam to escape.

Bake for 20-25 minutes, or until the puff pastry is golden brown and puffed.
