Dice the bacon into small pieces. Place the diced bacon in a large cast-iron skillet or Dutch oven.

Cook the bacon over medium heat until it is crispy. Once cooked, use a slotted spoon to remove the crispy bacon from the skillet, leaving the rendered bacon grease in the pan. Set the crispy bacon aside.

Add the diced yellow onion and diced green bell pepper to the bacon grease in the skillet. Sauté the vegetables until they are softened, which should take about 5 to 7 minutes.

To the skillet with the sautéed vegetables, add the two cans of baked beans, BBQ sauce, packed brown sugar, yellow mustard, apple cider vinegar, smoked paprika, and black pepper. Stir all ingredients together thoroughly to combine.

Stir about half of the cooked crispy bacon into the bean mixture in the skillet.

Place the skillet onto a preheated Pit Boss grill or smoker set to 275°F.

Cook the baked beans on the smoker for 2 to 3 hours, or until they are thick and bubbly. Stir the beans occasionally during cooking to prevent sticking and ensure even heating.

Remove the baked beans from the smoker. Garnish with the remaining crispy bacon and, if desired, sliced jalapeños before serving hot.
