Preheat your oven to 425°F. On a large baking sheet, toss the cut russet potatoes with 2 tablespoons of olive oil, 1/2 teaspoon of kosher salt, 1/4 teaspoon of black pepper, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of paprika until evenly coated. Spread them in a single layer.

Bake the potatoes for 30-35 minutes, flipping halfway through, until golden brown and crispy. While the potatoes are baking, prepare the steak and shrimp.

In a medium bowl, toss the cubed sirloin steak with 1 tablespoon of olive oil, 1/2 teaspoon of kosher salt, 1/4 teaspoon of black pepper, 1/4 teaspoon of onion powder, and 1 teaspoon of Worcestershire sauce.

Heat a large skillet over medium-high heat. Once hot, add the seasoned steak in a single layer, being careful not to overcrowd the pan. Sear for 2-3 minutes per side for medium-rare, or until cooked to your desired doneness. Remove the steak from the skillet and set aside.

In the same skillet (add a little more olive oil if needed), add the large shrimp. Season with 1 tablespoon of olive oil, 1 teaspoon of minced garlic, 1/4 teaspoon of red pepper flakes, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of black pepper. Cook for 2-3 minutes per side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

For the cheese sauce, melt 2 tablespoons of unsalted butter in a medium saucepan over medium heat. Whisk in 2 tablespoons of all-purpose flour and cook for 1 minute, stirring constantly, to create a roux.

Gradually whisk in the 1 1/2 cups of warmed whole milk until smooth. Bring the mixture to a gentle simmer, then reduce heat to low. Stir in the shredded sharp cheddar cheese, Monterey Jack cheese, and cubed cream cheese until fully melted and smooth. Season with 1/4 teaspoon of kosher salt, 1/8 teaspoon of white pepper, and 1/8 teaspoon of cayenne pepper.

Once the fries are crispy, transfer them to a large serving platter. Arrange the cooked steak cubes and shrimp over the fries. Generously drizzle the warm cheese sauce over the entire dish.

Garnish with chopped fresh parsley and a sprinkle of freshly ground black pepper. Serve immediately and enjoy!
