Place the 500g chicken breast into a pot. Add enough water to the pot to completely cover the chicken breasts.

Bring the water to a boil over high heat. Once boiling, reduce the heat to a simmer and cook for 15 minutes.

After 15 minutes, remove the chicken from the pot and set it aside to cool down. Reserve the chicken cooking liquid (broth) from the pot.
Once the chicken has cooled, shred it into fine strands using your hands or a fork.

Finely chop the 10g of ginger and the 30g of spring onion, including both the white and green parts.

Place the finely chopped ginger and spring onion into a heatproof bowl. To the bowl, add 1 teaspoon salt, 1 teaspoon sugar, 1 teaspoon white pepper, 1 tablespoon light soy sauce, and 2 tablespoons sesame oil.

Heat 2 tablespoons of neutral oil in a small pan until it is smoking hot. Carefully pour the hot oil directly over the ingredients in the bowl. The mixture will sizzle upon contact with the hot oil.

Add 1 tablespoon of rice vinegar to the sauce mixture. Stir all the ingredients thoroughly until they are well combined.

Pour the prepared spring onion sauce over the shredded chicken. Mix well, ensuring that all the shredded chicken is evenly coated with the sauce.

Optionally, add 2-3 tablespoons of the reserved chicken cooking liquid to the mixture. This will add extra moisture and flavor to the dish. Serve the shredded chicken with spring onion sauce, typically alongside rice.
