Preheat your multicooker to the 'sear' or 'sauté' setting. Add 1 tablespoon of vegetable oil. Season the chuck steak cubes with salt and pepper. Sear the chuck steak in batches until browned on all sides, about 3-4 minutes per batch. Remove the seared steak from the multicooker and set aside.

In the same multicooker, add the diced bacon. Cook until crispy, stirring occasionally, about 5-7 minutes. Remove the crispy bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.

Add the chopped onion to the multicooker and sauté until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.

Return the seared chuck steak to the multicooker. Pour in the beef stock. Add the dried thyme and bay leaves. Stir everything together. Close the lid and set the multicooker to the 'stew' or 'pressure cook' setting for 60 minutes, or 'slow cook' for 3-4 hours on high, until the steak is tender.

Once the steak is cooked and tender, remove the bay leaves. Stir in the crispy bacon and shredded cheddar cheese until melted and combined. Taste and adjust seasoning if necessary.

Preheat your oven to 375°F (190°C). Divide the steak and bacon mixture among individual pie dishes or an oven-safe casserole dish. Top with the thawed light puff pastry, trimming to fit and crimping the edges. You can cut a few slits in the pastry to allow steam to escape.

Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and puffed up. Let the pies cool for a few minutes before serving.
