Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easier cleanup.

Prepare the Jimmy Nardello peppers. While these peppers are typically mild and don't require seeding, you can remove the stems and any large seeds if desired. Slice the peppers lengthwise into 1/2-inch strips.

In a large bowl, combine the sliced Jimmy Nardello peppers, sliced garlic, extra virgin olive oil, kosher salt, and freshly ground black pepper. Toss gently to ensure all the peppers are evenly coated.

Spread the seasoned peppers and garlic in a single layer on the prepared baking sheet. Avoid overcrowding the pan, as this will steam the peppers instead of roasting them. Use two baking sheets if necessary.

Roast the peppers for 20-25 minutes, or until they are tender and slightly charred at the edges. Halfway through the cooking time (around 10-12 minutes), gently toss the peppers to ensure even roasting.

Once roasted, remove the baking sheet from the oven. Transfer the peppers to a serving dish. Garnish with fresh chopped parsley before serving.
