Preheat your oven to 180°C (350°F).

Crush 2 cloves of garlic. In a medium bowl, combine the crushed garlic with 1 teaspoon salt, 1 teaspoon sugar, and 1 teaspoon pepper. Add 1 tablespoon fish sauce, 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 tablespoon sesame oil, 1 tablespoon honey, and 1 tablespoon hoisin sauce. Mix all the marinade ingredients thoroughly until well combined.

Place the pork shoulder in a roasting pan or a large dish. Rub the prepared marinade generously all over the pork shoulder, ensuring it's fully coated.

Roast the marinated pork shoulder in the preheated oven for 2 hours, or until the internal temperature reaches 63°C (145°F) and the pork is tender. Once roasted, remove from the oven and let it rest for 10-15 minutes before slicing thinly.

While the pork is roasting, prepare the pickled vegetables. Peel and julienne the carrots and daikon. You should have about 1 cup of each.

In a saucepan, combine 1 cup water, 1 cup white vinegar, 1/2 cup sugar, and 1 teaspoon salt. Bring the mixture to a boil over medium heat, stirring continuously until the sugar and salt are completely dissolved.

Place the julienned carrots and daikon into a clean, heat-proof jar. Carefully pour the hot pickling liquid over the vegetables in the jar, ensuring they are fully submerged. Allow the vegetables to cool to room temperature, then cover and refrigerate for at least 30 minutes to an hour for optimal pickling. These can be made ahead of time.

To assemble the sandwiches, take each baguette-style bread and slice it lengthwise, but not all the way through, creating a pocket for the fillings.

Spread a generous layer of pate on one side of the sliced baguette. On the other side, spread a layer of mayonnaise.

Layer the sliced ham inside the baguette, followed by a generous amount of the thinly sliced roasted pork.

Place a layer of the pickled carrots and daikon on top of the meats. Add fresh coriander/cilantro sprigs, sliced cucumber, and finish with sliced red chilies, to your preference.
