Thinly slice the sirloin against the grain. In a medium bowl, combine the sliced beef with baking soda, 1 1/2 tablespoons of soy sauce, 1 1/2 tablespoons of oyster sauce, and black pepper. Mix well to ensure the beef is evenly coated. Set aside to marinate while preparing other ingredients.

In a separate small bowl, whisk together the 1/4 cup soy sauce, brown sugar, 2 tablespoons of oyster sauce, sake, sesame oil, and black pepper for the udon sauce. Slice the yellow onion and separate the whites and greens of the green onions. Mince the garlic.

Heat 1 tablespoon of neutral oil in a large skillet or wok over high heat until shimmering. Add the marinated beef in a single layer, working in batches if necessary to avoid overcrowding. Sear the beef for 2-3 minutes per side until it develops a nice brown color. Remove the seared beef from the pan and set aside.

Add the remaining 1 tablespoon of neutral oil to the same pan. Add the pre-cut vegetable slaw mix and stir-fry for 2-3 minutes until it begins to soften. Then, add the sliced yellow onion and the white parts of the green onions. Continue to stir-fry for another 3-4 minutes until the onions are soft and translucent.

Add the minced garlic to the pan and stir-fry for 30 seconds until fragrant. Immediately add the pre-cooked udon noodles, the prepared udon sauce, the seared beef, and the green parts of the green onions to the pan. Toss everything together vigorously until all ingredients are well combined and the noodles are heated through and coated in the sauce.
