Zest one lemon directly into the oil and spice mixture. Whisk all the marinade ingredients thoroughly until well combined.

In a large baking dish, arrange the potatoes, scored chicken breasts, and whole peeled garlic cloves.

Pour the prepared marinade evenly over the chicken, potatoes, and garlic in the baking dish. Using gloved hands or tongs, thoroughly mix and coat all the chicken, potatoes, and garlic with the marinade, ensuring everything is well seasoned.

Arrange the slices of the second lemon on top of the marinated chicken and potatoes.

Place the baking dish into the preheated oven. Bake for 60-70 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the potatoes are tender and golden brown. Flip the potatoes and chicken halfway through baking for even browning.
