Chop the medium onion. Chop the green onion, reserving some for garnish.

Trim the ends off the shimeji mushrooms and enoki mushrooms.

Slice the napa cabbage and thinly slice the carrot.

Slice the half block of soft tofu into desired pieces.

Prepare your chosen noodles (udon, vermicelli, or shirataki) according to package instructions if they require pre-cooking (e.g., boiling vermicelli or shirataki). If using fresh udon, simply have it ready.

In a bowl, combine the sake, mirin, soy sauce, sugar (start with 1 teaspoon and add more to taste), dashi powder, and water. Whisk until the sugar and dashi powder are fully dissolved.

Place a hot pot or sukiyaki pan on a burner or heat source over medium heat.

Arrange the chopped onion slices in the bottom of the hot pot.

Add the thinly sliced beef to the pot, allowing it to cook slightly and brown on one side.

Layer the sliced napa cabbage, thinly sliced carrot, shimeji mushrooms, enoki mushrooms, and sliced soft tofu into the pot around the beef.

Pour the prepared sukiyaki sauce evenly over all the ingredients in the pot.

Add your choice of prepared noodles to the pot.

Cover the pot and simmer for 10-15 minutes, or until all ingredients are cooked through and tender.

Garnish with the reserved chopped green onions before serving immediately.
