Using a microplane or zester, carefully zest the entire lemon, then the entire lime, and finally the entire orange. Be sure to only get the colored part of the peel, avoiding the bitter white pith.

Transfer all the collected fruit zest into a medium-sized pot. Add the 1 cup of coconut sugar, 1/2 teaspoon of coriander, 1/2 teaspoon of nutmeg, the 1 Mexican cinnamon stick, and 1/2 cup of water to the pot.

Stir all the ingredients in the pot with a spatula to combine. Bring the mixture to a boil over medium-high heat, stirring occasionally.

Once the syrup has reached a boil, remove it from the heat. Carefully strain the hot syrup through a fine-mesh strainer into a small heatproof bowl or container to remove the solid ingredients (zest and cinnamon stick). Discard the solids.

To the strained syrup, add 1 teaspoon of bitters and 1 teaspoon of vanilla extract.

Stir the syrup thoroughly to incorporate the bitters and vanilla extract. At this point, the syrup should have a distinct Coca-Cola-like aroma and taste.

To assemble the drink, fill a tall glass with ice cubes. Pour the prepared Coca-Cola syrup into the glass, filling it about 1/4 to 1/3 of the way up (adjust to your preferred strength, as the syrup is concentrated). Top off the rest of the glass with seltzer water.

Give the drink a quick mix with a spoon and serve immediately. Enjoy your homemade 'Coca-Cola'!
