In a small bowl, combine the milk, zest and juice from 1/2 a lime, 1 tablespoon of honey, 1 heaped tablespoon of Greek yogurt, and 1 heaped tablespoon of chia seeds. Mix thoroughly until all ingredients are well combined.

Cover the bowl and refrigerate the chia pudding mixture for at least 30 minutes to allow it to set.
While the chia pudding chills, prepare the granola. Chop a small handful of pistachios.

In a frying pan, melt 1 tablespoon of butter over medium heat. Add 2 tablespoons of honey or maple syrup and swirl to combine.

Add the chopped pistachios and 1/2 cup of oats to the pan. Toss the mixture with a wooden spatula until the pistachios and oats are evenly coated.

Continue to stir the granola mixture occasionally for 5-6 minutes, until it turns golden brown. Once golden, gather the granola into one corner of the pan and spread it into an even, flat layer.

Remove the pan from the heat and allow the granola to cool slightly.

To assemble the bowl, place about 1/2 cup of Greek yogurt into your chosen serving bowl to form a base layer.

Spoon the set lime chia pudding over the Greek yogurt in the bowl.

Peel and slice 1 kiwi into rounds. Arrange the sliced kiwi neatly onto one side of the bowl.

Break up the cooled granola into clusters using a wooden spoon. Carefully place the granola clusters into the bowl, next to the kiwi slices.

Add a small handful of raspberries, 1 tablespoon of nut butter, and a sprinkle of flaked coconut to the bowl. If desired, drizzle with extra honey.
