Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium metal mixing bowl, peel the ripe banana and mash it thoroughly with a fork until smooth.

Add the peanut butter to the mashed banana. Mix well with a spatula or spoon until the banana and peanut butter are fully combined and form a cohesive dough.

Stir in the white chocolate chips until evenly distributed throughout the dough. If using, you can also add regular chocolate chips at this stage, or reserve them for half of the cookies later.

Using a spoon, scoop small, uniform portions of the cookie dough onto the prepared baking sheet. You should get about 8-9 cookies from this batch.

Gently flatten each cookie portion with the back of a spoon to your desired thickness.

Bake for 10-12 minutes, or until the edges are lightly golden brown and the cookies are set. The exact baking time may vary depending on your oven and cookie thickness.
