Preheat your oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.

Arrange the frozen fish sticks in a single layer on the prepared baking sheet. Bake for 12-15 minutes, or according to package directions, until they are golden brown and crispy.

While the fish sticks are baking, prepare the homemade tartar dip. In a small bowl, combine the mayonnaise, finely chopped dill pickles, fresh lemon juice, fresh dill (if using), salt, and black pepper. Stir well until all ingredients are thoroughly mixed. Taste and adjust seasoning as needed.
Once the fish sticks are cooked, carefully remove them from the oven.

To assemble the 'boats': Place a split hot dog bun on each serving plate. Arrange 4 crispy fish sticks inside each bun.

Place a cheddar cheese triangle on top of the fish sticks in each bun to resemble a sail. If desired, add shredded green leaf lettuce around the base of the fish sticks for a 'sea' effect.
Serve the fish stick boats immediately with the homemade tartar dip on the side. Garnish with fresh chopped parsley, if using, for an extra touch of color.
