Place the cucumbers on a cutting board. Using the flat side of a large knife or a rolling pin, gently but firmly smash the cucumbers until they begin to crack and break apart.

Cut the smashed cucumbers into bite-sized pieces, approximately 1 to 1 1/2 inches long.

Transfer the cucumber pieces to a medium-sized bowl. Add 1 tablespoon of salt to the cucumbers and mix thoroughly to ensure all pieces are coated.

Let the salted cucumbers sit for 10 minutes. This process will draw out excess water, making the salad crispier and more flavorful.

After 10 minutes, carefully drain the excess water from the cucumbers. You can use a colander or simply tilt the bowl and press the cucumbers gently against the side to release the liquid.

Add 1 tablespoon of granulated sugar, 1 tablespoon of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of sesame oil, 1 teaspoon of minced garlic, 1 teaspoon of chili oil, and 1 teaspoon of sesame seeds to the drained cucumbers.

Mix all the ingredients well until the cucumbers are evenly coated with the dressing. Taste and adjust seasonings if desired.
