Bring a large pot of water to a rolling boil. Add the 5 ears of corn and boil for 6-8 minutes, or until the corn is tender. Carefully remove the corn from the boiling water and set it aside.

In a large skillet or frying pan, melt the 2 tablespoons of butter over medium heat. Add the minced garlic, minced shallot, and chopped fresh parsley. Sauté, stirring frequently, until the aromatics are fragrant, about 2-3 minutes.

Allow the sauce to continue to gently simmer, stirring occasionally, until it has slightly thickened, about 5-7 minutes. Then, stir in the 1/4 cup of grated Parmesan cheese until melted and fully incorporated.

Add the previously boiled corn back into the skillet with the creamy Cajun sauce. Simmer for an additional 10 minutes, turning the corn occasionally, until it is thoroughly coated and the sauce is rich and creamy.
