Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Add 1 pound of ground turkey (or beef) to the pot and cook until it is browned, breaking it up with a spoon. Drain any excess fat.

Add 1 diced onion to the pot and cook until it is softened, approximately 5 minutes.

Stir in 2 cloves of minced garlic, 1 teaspoon of Italian seasoning, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 1 minute until fragrant.

Pour in 1 (28 ounce) can of crushed tomatoes, 1 (15 ounce) can of tomato sauce, and 4 cups of chicken broth. Bring the mixture to a simmer.

Add 6 lasagna noodles, broken into pieces, to the simmering soup. Cook until the noodles are al dente, which should take about 10-12 minutes, stirring occasionally to prevent them from sticking together.

While the noodles are cooking, prepare the ricotta cheese mixture: In a small bowl, combine 1 cup of ricotta cheese, 1/4 cup of grated Parmesan cheese, 1 tablespoon of fresh chopped parsley, 1/2 teaspoon of garlic powder, and salt and pepper to taste. Mix all ingredients well until combined.

Stir 1/2 cup of heavy cream into the prepared soup.

Serve the lasagna soup hot. Top each serving with a dollop of the ricotta cheese mixture, then sprinkle with 1/2 cup of grated Parmesan cheese, 1/2 cup of shredded mozzarella cheese, and 1/4 cup of chopped fresh parsley.
