Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan with butter and gluten-free flour.

In a large bowl, mash the ripe bananas thoroughly with a fork or potato masher until mostly smooth with a few small lumps remaining.

Add the eggs, cottage cheese, maple syrup, and vanilla extract to the mashed bananas. Whisk well until all the wet ingredients are combined and the cottage cheese is mostly incorporated.

In a separate medium bowl, whisk together the gluten-free all-purpose flour blend, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to a tough bread.

Gently fold in the 1/2 cup of chocolate chips.

Pour the batter into the prepared loaf pan. Sprinkle additional chocolate chips on top, if desired.

Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. The top should be golden brown.
