Preheat your oven to 190°C (375°F). If using an air fryer, preheat it to 180°C (350°F).

In a medium-sized bowl, combine the well-drained cottage cheese, shredded mozzarella cheese, large egg, garlic powder, onion powder, paprika (if using), salt, and black pepper. If desired, add the almond flour for extra firmness. Mix all ingredients thoroughly until well combined.

Scoop tablespoon-sized portions of the mixture and gently roll them into uniform balls. You should get approximately 18-20 bites.

Arrange the formed bites on a parchment-lined baking tray. If using an air fryer, place them in the air fryer basket.

Lightly brush the tops of the bites with olive oil or melted butter if you desire extra crispiness.

Bake in the preheated oven for 12–15 minutes, flipping the bites once halfway through, until they are golden brown and crisp. If using an air fryer, cook for 8–10 minutes, shaking the basket halfway through to ensure even cooking.

Once cooked, remove the bites from the oven or air fryer and let them cool for 2 minutes before serving warm.
