Ingredients
For the Chicken Salad
- 1 1/4 pounds grilled chicken breast, chopped as finely as possible (or rotisserie chicken)
- 3 Persian cucumbers, finely chopped
- 1 bunch scallions, finely chopped
- 1 bunch green onions, finely chopped
- 1 cup cherry tomatoes, halved
- 8 slices cooked turkey bacon, finely chopped
For the High Protein Ranch Dressing
- 3/4 cup fat free Greek yogurt
- 3/4 cup low fat cottage cheese
- 2 tablespoons ranch seasoning, (such as Trader Joe's brand)
- 2 cloves garlic
- 1 teaspoon ground black pepper
- 2-3 tablespoons water, if needed to thin

To make the High Protein Ranch Dressing, combine the fat free Greek yogurt, low fat cottage cheese, ranch seasoning, garlic, and ground black pepper in a blender. Blend until the mixture is completely smooth and pourable. If the dressing is too thick for your preference, add 2 to 3 tablespoons of water, blending again until the desired consistency is reached. Set the dressing aside.
