Add the ground chicken, drained and rinsed chickpeas, fresh cilantro, fresh dill, chopped green onions, minced garlic cloves, salt, paprika, cumin, and water to a food processor.

Process the ingredients in the food processor until a relatively smooth, green falafel mixture is formed. Scrape down the sides as needed to ensure even blending.

Prepare a shallow dish of warm water. Dip one rice paper wrapper at a time into the warm water for about 15-20 seconds until it becomes pliable. Lay the softened wrapper flat on a clean surface.

Using an ice cream scoop (approximately 30 ml or 2 tablespoons), place a portion of the falafel mixture onto the center of the wet rice paper. Fold the bottom edge of the rice paper over the mixture, then fold in the sides, and finally roll it up tightly to create a compact square or ball shape.

Lightly sprinkle or roll the rice paper-wrapped falafels in sesame seeds to coat them evenly.

Preheat your air fryer to 190°C (375°F). Place the assembled falafels in a single layer in the air fryer basket, ensuring not to overcrowd. You may need to cook them in batches.

Air fry for 12-15 minutes, flipping halfway through, until the falafels are golden brown and crispy.

Once cooked, carefully remove the crispy falafels from the air fryer. Serve immediately with tahini for dipping. For presentation, you can cut them in half to reveal the vibrant green interior.
